Indian red lentil with veggie

4 celery sticks

2 carrots

1 red onion

2 cloves of garlic

5cm piece of ginger

1 bunch of spring onions

olive oil

2 teaspoon mustard seeds

2 teaspoon cumin

1 tablespoon curry powder

1 red chilli pepper

1/4 lžičky římského kmínu (kumín)

200g red lentil

salt, pepper

apricot chutney

Chop finely garlic, onion, spring onion, ginger and chilli pepper. Carrot and celery cut in pieces. 

Heat up the oil, add onions, garlic, ginger and chilli pepper and spices. After a minute add the celery and carrots. Then add the lentils and fry for a couple of minutes. Add the water (according to the bag instruction) and cook for about 8-10 minutes. Stir occasionaly. 

Add the salt at the end and serve with mango chutney.
