100g goat cheese
1 small baquette cut in to 4 slices
4 TBSP olive oil
1 TBSP lemon juice
0,5 TBSP dijon mustard
1 crushed clove of garlic
a nice handful of rucola
Cut the cheese in 4 slices. Toast the slices of baquettes and put the slices of cheese on them. Sprinkle with freshly ground pepper and little bit of olive oil. Place on a tray and bake in a hot oven (about 200°C) or under the gril for about 3-5 minutes.
Meanwhile mix the rest of olive oil, lemon juice, mustard and garlic. Put rucola on a plate, sprinkle with the dressing and put warm goat cheese toasts on a top.
