Garden pea soup

Wonderful recipe for green pea soup almost dairy free.

500g frozen greenpeas
500ml water
1 tablespoon double cream
fresh basil
salt, pepper
croutons for serving

Bring to the boil water and salt, add the greenpea and leave to cook for 5 minutes. Put away from the flame, add chopped basil and double cream. Blend with the hand mixer. Add salt and pepper to your preferences. Serve with the roasted croutons in olive oil. You can also add a little bit of fresh mint.
