Couscous salad with halloumi

150g couscous
2 peppers
1 small red onion
1/4 cucumber
olive oil
2 smashed cloves of garlic
100g mushrooms
150g Halloumi cheese
fresh herbs

Cook the couscous according to instructions and set aside.

On a small heat roast the peppers cut in to thin slices, onion, garlic and mushrooms about 5 minutes and mix with the couscous.

Now roast the Halloumi on a little bit of olive oil until golden (from both sides) and mix with couscous along with the fresh herbs and season with the salt and pepper as you like.
