Vegan Greenland Onion Soup

Onion soup with horseradish

1 big onion
olive oil
20g butter
2 tablespoons of plain flour
1l vegetable stock
200g chopped tomatoes
salt, pepper
30g grated horseradish

Chop onion to thin slices. Melt the butter with the oil and add the onion. Add the flour and stir well. Pour in the stock and bring to the boil. Add the tomatoes and season with salt and pepper. Put away from the heat, add the horseradish and serve immediately.
